Tamarind Balls Recipe

Tamarinds are very popular in the Caribbean and Asian countries. While many eat it as a fruit, it is often enjoyed as a sugary treat. Be WARNED, this recipe requires a lot of sugar!
Tamarind Balls Recipe

2 lb of Tamarinds (shells removed)
1 ½ cups brown sugar (Use sugar to your own taste)
½ cup white sugar (granulated)
2 tablespoons red rum (This is optional)

Use your hands to open the tamarind pods and remove the strings from the pulp and place in a bowl.

If you decided to use the red rum, sprinkle the rum evenly on the pulps.

Add sugar to your own taste.

Knead tamarinds with your hands into a dough. This maybe a sticky job.

As you knead, try and remove as many of the seeds as you can, but don't worry if you can't get them all.

Break off a bit of the dough and roll in the palm of your hands into small balls. See photo for approximate size, but you can roll them as big or little as you like.

Pour some white granulated sugar in a bowl or plate and roll tamarind balls in sugar.
